Garlicky Oregano Dressing
This dressing is extremely versatile: one minute she's fulfilling your Italian pizza shop salad dreams, and the next she's packing your carry-on full of kalamata olives, cucumbers, and feta to whisk you away to Greece! She's courting you, and we love that.
WHAT YOU'LL NEED:
½ cup olive oil
3 tablespoons red wine vinegar
2 tablespoons dried oregano
½ tsp kosher salt
¼ tsp red pepper
1 tablespoon spicy mustard
6 whole garlic cloves
WHAT YOU'LL DO:
Literally so simple. Blend all ingredients in a magic bullet or your preferred blender. Mix into salad greens and enjoy!

Here are the ingredients and recipe for the Italian pizza shop salad (pictured above) I make to serve alongside Bimpy's Pizza.
WHAT YOU'LL NEED:
Canned chickpeas, drained
Olive oil
Garlic
Salad greens
Endive, sliced
Daikon radish, sliced
Provolone cheese, sliced
Salami, sliced
Pecorino Romano, grated
WHAT YOU'LL DO:
Place chickpeas, olive oil, and garlic in a skillet over medium heat. Toast until golden and crispy. Let cool.
In a large bowl, mix salad greens, endive, daikon radish, provolone, salami, pecorino, garlicky oregano dressing and crispy chickpeas.
Add salt, pepper, and red pepper flakes to taste and enjoy!
